Quick & Easy Beef Hotpot

Beef Hot Pot

  • Serves 4
  • FREE on Extra Easy

Ingredients – 

  • 1 x 400g Tin of Sainsbury’s Stewed Steak
  • Mixed Veg
  • 1 or 2 Large Potatoes


  • Pre heat oven on 180/200
  • Put the stewed steak in a bowl and add mixed veg ( I use a frozen mix of peas, carrots, sweetcorn, Bean) and mix.
  • Very thinly slice the potatoes
  • Tip the meat & veg mix in to a oven proof dish and lay the slices of potato over the top, spray with frylight and then pop in the oven for about 30/40mins until the potatoes on top are brown.
  • Eat on its own or serve with more veg and may be even some mash…… delish 😀

Almost Christmas !!!!

Yes well it will be here again soon …. Christmas is 13 weeks away 😀 😀 Well you may have guessed but I do love Christmas 😀 😀

Sooooo I have 13 weeks to lose some more of this pesky weight !!! Whats nice now is that all the kids are back to school Holidays are over, Yes we did have a fab 6 weeks but I do like getting back into my routine and I need to remember what I have learnt over the holidays so that I do not make the same mistakes next year !!!!!

I have decided that by Christmas I would like to have lost another stone, and yes that may not sound a lot but one thing I have learnt is that sometimes life gets in the way and yes sometimes I do fall off the wagon. I think the trick is to just try and get back on the wagon as soon as you can 😀

I have also learnt that I NEED to go to group every week with out fail and stay to the meeting, we are only a small group but of course we are perfectly formed and we do have a great laugh.

I went to weigh in last night and very pleased to say that I have lost 1.5lbs so happy with that, I now just have to lose another 1.5lbs and then I will be back to what I was before the summer holidays 🙂

I am now off to do my Menu Plan for the next week which I will post up later 🙂

Holiday Gain ……

So holidays are now over !!!!! I went to weigh in on Tuesday evening only to find that I have gained 5lbs !!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! 😦

Well When I got home I ordered my shopping and then did a menu plan for this week which I have printed off and stuck to my fridge …… So far so good I have stuck to plan 100% and I feel better already not more indegestion and I am getting a better nights sleep 😀

So this week I am treating it like my first week at Slimming World I have drawn a line under August and have moved on 😀
