You Will Need :
- 150g Tomato Puree
- 2 tsp Cayenne pepper
- 2 tsp Garlic Salt
- 1 tbsp Mixed Herbs
- Freashly Ground Black pepper
- 1 Egg White
- 60g Wholemeal Roll
- 12 Skinless & Boneless Chciken Thighs ( used Chicken Breast)
- Low Calorie Cooking Spray
What To Do :
Preheat oven to 220c/Fan 200c/Gas 7 and line a baking tray with non-stick baking paper.
Mix the tomato puree, cayenne pepper, garlic salt and mixed herbs in a large bowl and season with black pepper. Whisk the egg white in a clean bowl until it forms stiff peaks, then fold in the tomato puree mixture.
Whizz the roll into crumbs and then transfer onto a plate.
Dip the chicken in the egg mixture and then roll in the breadcrumbs, coating evenly. Place chicken onto the baking tray. Once all the chicken is coated spray with the low calorie cooking spray and bake in the oven for 25-30 minutes.
I served mine with Slimming World wedges and salad.
