Slimming World Spiced Chicken

This is a great recipe that all the family will enjoy, the recipe comes from the new Slimming World Fakeaways Recipe Book 😀

  • Serves 4
  • 1.5 Syns On Extra Easy
  • 1.5 Syns On Original
  • 21 Syns On Green

You Will Need :

  • 150g Tomato Puree
  • 2 tsp Cayenne pepper
  • 2 tsp Garlic Salt
  • 1 tbsp Mixed Herbs
  • Freashly Ground Black pepper
  • 1 Egg White
  • 60g Wholemeal Roll
  • 12 Skinless & Boneless Chciken Thighs ( used Chicken Breast)
  • Low Calorie Cooking Spray

What To Do :

Preheat oven to 220c/Fan 200c/Gas 7 and line a baking tray with non-stick baking paper.

Mix the tomato puree, cayenne pepper, garlic salt and mixed herbs in a large bowl and season with black pepper. Whisk the egg white in a clean bowl until it forms stiff peaks, then fold in the tomato puree mixture.

Whizz the roll into crumbs and then transfer onto a plate.

Dip the chicken in the egg mixture and then roll in the breadcrumbs, coating evenly. Place chicken onto the baking tray. Once all the chicken is coated spray with the low calorie cooking spray and bake in the oven for 25-30 minutes.

I served mine with Slimming World wedges and salad.

Meat Sauce

This is a really lovely meat sauce that is FREE on Slimming World, great for the whole family.

You Will Need

  • 500g Pack Extra Lean Mince Beef
  • 1 x Onion, Finely Chopped
  • 2 x Garlic Cloves, Crushed
  • 1 x Tin Chopped Tomatoes
  • 1 x Tin Of Baked Beans
  • Sprinkle Of Mixed Herbs
  • Vegatable Oxo Cube, Make Up To 1 Pint

Method

  • Spray some Frylight into a pan and heat, add the onions & the garlic and fry for a minute or so.
  • Add the beef and stir, cook until all beef is brown
  • Add the tomatoes, baked beans and mixed herbs and stir.
  • Add the stock and then stir
  • Now leave to cook on a low heat until the sauce thickens, make sure that you stir regularly other wise it will burn at the bottom.

This meat sauce is great for all sorts of dishes and if you like it a bit spicy then just add some finely chopped chillies.

The sauce will keep in the fridge for a couple of days or it can be frozen.

(If you do not use the Extra Lean Mince Beef then it will not be free and you would need to work out the syn value)

Cheesey Scones

If you use the Laughing Cow Triangles as a Healthy Extra A then you could say that the scones are FREE on Extra Easy, they are a tweak so if you prefer count as 1 syn per 4 scones.

Ingredients

  • 250g Tub Fat Free Cottage Cheese and Chives
  • 3 Laughing Cow Extra Light (take from HE A or 1 syn each)
  • Salt & Pepper
  • 2 Eggs
  • 100g Plain Instant Mash, you can add chives or finely chopped onion to it to flavour it if you wish

Method

  • Put cottage cheese and the laughing cow in a bowl and season with salt and pepper.
  • Blend with a hand mixer .
  • Add the 2 eggs and blend again .
  • Add the  mash powder as it is, straight from the pack .Mix all together and then mould into approx 12 scones.
  • Place on a baking tray (I spray with fry light), flatten a little and then bake in the oven @ 170 degrees (fan oven) for 20-25 mins.

Really yummy especially served with a spread of laughing cow on top!

Hint – If you can’t find the free cottage cheese and chives, just get plain cottage cheese and add dried chives (that’s what I did!)

Roast Chicken & Garlic Potatoes

Roast Chicken & Garlic Potatoes

This is a nice easy dinner for any day of the week that all the family will love.

Free on Extra Easy 😀

What You Need Per Person

  • 1 to 2 Chicken Breasts (skin removed)
  • 2 or 3 Potatoes, peeled and cut into medium chunks
  • Good size helping of any vegetables you like.

Method

  • Boil the potatoes in a pan for about 10 minutes or until they start the soften. drain and place back in the pan. Now spray with a good coating of spray oil ( I tend to use Fry Light) and add a good heaped teaspoon of crushed garlic. Stir the potato’s and then tip into a roasting tin and place in a hot oven.
  • Place the chicken breast in a roasting tin, I then add about an inch of vegetable stock to the roasting pan this stops the chicken drying out, now cover with tin foil and place in the oven.
  • The potatoes will take about 60 minutes  to cook and the chicken will take to 40 mins to cook, with the chicken take the foil off after about 30 minutes so that it gets a bit of colour.
  • Serve with your choice of vegetables.

This dinner is free on Extra Easy just remember that is you have any gravy you will need to syn it. 😀
